White Chicken Chili
Ingredients:
- 2-3 chicken breast boiled and cubed
- 1 small onion
- 1 red pepper
- 2 gloves garlic
- 1 poblano pepper (or 2 if you like spicier)
- 1 tsp olive oil
- 32 ounces low sodium chicken broth
- 1 can navy beans (low sodium if possible and rinsed well)
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp cilantro
- ¼ tsp cayenne pepper (if you like spicier)
Directions:
Boil chicken breast and cube. Cut up onion, red pepper, garlic, poblano pepper and sauté in olive oil until tender. Add all ingredients to a large pot and bring to boil. Simmer for 1 hour.
*You may also add all ingredients to a crock pot and cook on low 6-8 hours.
