White Chicken Chili

Ingredients:

  • 2-3 chicken breast boiled and cubed
  • 1 small onion
  • 1 red pepper
  • 2 gloves garlic
  • 1 poblano pepper (or 2 if you like spicier)
  • 1 tsp olive oil
  • 32 ounces low sodium chicken broth
  • 1 can navy beans (low sodium if possible and rinsed well)
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp cilantro
  • ¼ tsp cayenne pepper (if you like spicier)

Directions:

Boil chicken breast and cube.  Cut up onion, red pepper, garlic, poblano pepper and sauté in olive oil until tender.  Add all ingredients to a large pot and bring to boil.  Simmer for 1 hour.

*You may also add all ingredients to a crock pot and cook on low 6-8 hours.
