Latin Chicken with Black Beans and Sweet Potatoes

 

4 chicken breasts

2 ½ tsp cumin

1 tsp paprika

½ tsp allspice

2 cups low sodium chicken broth

1 cup salsa

3 cloves garlic

2 cans low sodium black beans rinsed and drained

2 lbs sweet potatoes cut into ½ inch slices

1 red pepper

2 tsp cilantro 


Sprinkle chicken with 1tsp cumin, salt substitute and pepper.  Place in non stick skillet and brown on both sides and cook about 10 min.  Remove skillet from heat and transfer chicken to a plate.

In same skillet, combine paprika, allspice, chicken broth, salsa, garlic and remaining1½ tsp cumin.

In slow cooker, combine beans and sweet potatoes.  Place chicken on top of potato mixture in slow cooker, place thin sliced red peppers on top of chicken.  Pour broth mixture over chicken.  Cook on low for 8 hours or on high for 4 hours.
