Herb Chicken and Garden Vegetable Medley

 

 

 

1 1/4 lbs chicken tenders

1 can low sodium diced tomatos

1 pkg frozen tri-color pepper and onion mix

1 pkg frozen spinach

1  fresh zuchini

2 yellow squash

spices: basil,parsley, chili powder, garlic powder, ground pepper

optional kick-up flavor....  hot sauce 

 

Place chicken tenders in large skillet. Sprinkle chicken with  basil, parsley,chili powder, garlic powder, and ground pepper. Gently brown both sides of chicken. Add all vegetables plus additional 1 tbsp of parsley and basil. Simmer until vegetables are tender.

 

This recipe lends well to the crock pot. After browning chicken, stick everything in the crockpot and go.
