Fajita Beef Tips and Brown Rice
Fajita Beef Tips & Brown Rice
2 ½ lbs of boneless lean stew beef
1 onion chopped
2 cloves of garlic, minced
14 oz can low sodium diced tomatoes, undrained
1 red bell pepper cut into 1 inch pieces
1 green bell pepper cut into 1 inch pieces
2 TBSP Fajita Mix (see below)
Homemade Fajita Mix
2 Tbsp Chili powder
1 Tbsp salt substitute
1 Tbsp paprika
1 Tbsp Splenda
2 crushed low sodium chicken bouillon cubes
1 ½ tsp onion powder
½ tsp garlic powder
½ tsp cayenne pepper
¼ tsp crushed red pepper flakes
½ tsp cumin
Cut beef into bite size pieces. Saute' in a fry pan with onions and garlic, then drain. Add tomatoes, fajita seasoning and beef mixture to crock pot. Place peppers on top. Cook on low for 7-9 hours (or high for 4-5) until beef is tender.
Serve with brown rice
